Ceviche (Lime soaked fish) – Serves 4-6

Ingredients:

  • 450 g of sea bass fillet
  • 5-6 limes
  • 1 cup of diced tomato
  • 1 sweet green pepper chopped
  • 4 tablespoons of chopped parsley
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1/2 oregano
  • 2 jalepeño peppers
  • 2 tablespoons of white vinegar
  • 1 medium onion finely chopped
  • 2 tablespoons of fresh chopped coriander
  • 1 dash of tabasco sauce
  • black olives
  • lettuce leaf
  • avocado

Preparation:

  1. Dice the fish approximately 1/2 inch
  2. Marinate fish in lime juice in the fridge over night and stir often
  3. Pour out the lime juice but leave a little to keep the fish moist
  4. Add the remaining ingredient except for the lettuce, avocado and olives a few hours before serving and refrigerate
  5. line a serving bowl with a lettuce leaf and fill with the mixture
  6. Garnish with the olives and avocado if wanted

Pescado Estilo Campeche (Campeche style fish) – Serves 4

Pecsado Estilo Campeche

  • 2 medium red snappers
  • 1/2 cup of white wine
  • 3 clove of garlic
  • 1 seville orange
  • 1/4 teaspoon of powdered chili
  • 1 tablespoon of annatto seeds
  • 1 pinch dried oregano
  • salt and pepper to taste

Preparation:

  1. Cut the heads and tails of f the fish but do not remove the scale
  2. Slit and open out flat to clean inside
  3. Toast the annatto seeds and lend with the salt, pepper, oregano, chili powder, garlic, juice of the orange and wine
  4. Marinate the fish in this mixture overnight
  5. Brush the open side with oil and broil on a hot plate for 10 mins
  6. Flip it over and cook on the skin side for 20 mins

Camerones A La Plancha (Grilled Prawns) – Serves 4

  • 2 medium tomatoes cored and finely diced
  • 3-5 serrano chilies finely diced
  • 3 garlic clove finely chopped and peeled
  • 1 small white onion finely diced
  • 1 1/4 teaspoons of salt
  • 400 g of shrimp
  • 2 tablespoons of fresh lime juice
  • 1/4 ground black pepper
  • 2 avocados
  • 1 1/2 tablespoons of olive oil
  • 6 tablespoons of chopped cilantro (coriander)

Preparation:

  1. Wash onions in a strainer and then add into a bowl with the tomatoes, chilies, garlic and 3/4 of the teaspoon of salt
  2. Devein and peel the prawn leaving the tail intact
  3. Place them into a bowl with the tablespoon of lime juice, remainder of the salt and the pepper
  4. Marinate for 30 min and then pat the shrimp completely dry
  5. Cut avocados in half and then peel them and cut into strips
  6. Lightly coat a large heavy griddle with olive oil. Set over medium-high heat. When very hot, lay shrimp in a single uncrowded layer. When half done, 2 1/2 to 3 minutes, flip them over and divide salsa and remaining tablespoon of lime juice over all.
  7. When the shrimp are done, use a pair of tongs to remove them to bowls, leaving behind as much salsa as possible. If using avocados, sprinkle them over the salsa and cook, scooping and stirring, until heated through, 1 1/2 to 2 minutes. Scoop up the salsa and sprinkle over the shrimp.

Tostada De Jaiba (Crab with fried tortilla) – Serves 8

ingredients:

Tostadas De Jaiba

  • Cooking oil
  • 8 tortillas
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teasppoon black pepper
  • 200 g canned crab meat, drained, flaked and cartilage removed or fresh cooked
  • 2 canned green chili peppers, rinsed,seeded and chopped
  • 1 small avocado
  • 2 cups shredded lettuce
  • 1 tomato, chopped and drained
  • Lime wedges
  • Bottles hot pepper sauce

Preparation:

  1. (Heavy skillet heat 1/4 inch oil) Fry tortillas, one at a time, in hot
    oil for 20-40 seconds on each side or till crisp and golden.
  2. Drain on paper toweling.
  3. Keep warm in foil in 250 degrees oven.
  4. Mix together lime juice, the tablespoon of olive oil, salt, and pepper.
  5. Toss with crab and chili peppers.
  6. Divide mixture among tortillas.
  7. Seed, Peel and cube avocado.
  8. Top crab and peppers with lettuce, tomato and avocado.
  9. Pass lime wedges and hot chili sauce (optional)
